Okay, here it is—Peach’s all-time favorite meal, actually the first meal her grandma made for her when we arrived in Korea! This is also known as “birthday soup” in Korea, traditionally eaten to celebrate birthdays. It’s made with seaweed, which is rich in vitamins, minerals, and especially iron!

Ingredients:
– 1 oz (30g) dried seaweed (miyeok)
– 1/2 lb (225g) beef (stew meat or ground beef)
– 1 tbsp sesame oil
– 1 tbsp soy sauce
– 2 tbsp fish oil
– 2 cloves garlic, minced
– 6 cups water or beef broth
– Salt and pepper to taste
Instructions:
1. Prepare the Seaweed:
– Soak the dried seaweed in a bowl of cold water for about 20-30 minutes until it softens.
– Once soft, drain and rinse the seaweed. Squeeze out excess water.
– Cut the seaweed into bite-sized pieces.
2. Cook the Beef:
– In a large pot, heat the sesame oil over medium heat.
– Add the beef and cook until it is no longer pink, about 3-4 minutes.
– Add the soy sauce and minced garlic to the beef and stir well.
3. Combine Ingredients:
– Add the prepared seaweed to the pot and stir to combine with the beef and garlic mixture.
– Pour in the water or beef broth.
4. Simmer the Soup:
– Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-40 minutes.
5. Season and Serve:
– Taste the soup and season with salt and pepper as needed.
– Serve hot with a bowl of rice.
