Chicken & Zucchini Pizza

Ingredients (for 2 medium pizzas):
   •   2 pizza bases (homemade or store-bought)
   •   250 g (9 oz) chicken breast, cut into thin strips
   •   1 medium zucchini, thinly sliced
   •   1 medium onion, thinly sliced
   •   2 cloves garlic, finely chopped
   •   200 ml (¾ cup) tomato sauce (pizza or passata)
   •   150–200 g (5–7 oz) shredded mozzarella (pizza cheese)
   •   2 tbsp olive oil
   •   1 tsp dried oregano
   •   1 tsp paprika
   •   ½ tsp chili flakes (optional)
   •   Salt & black pepper, to taste

Marinade for the chicken:
   •   1 tbsp olive oil
   •   1 clove garlic, minced
   •   1 tsp paprika
   •   ½ tsp oregano
   •   Salt & pepper

Method:
1. Marinate the chicken
      •   In a bowl, mix the chicken strips with olive oil, garlic, paprika, oregano, salt, and pepper.
      •   Let it rest for at least 20–30 minutes (or longer in the fridge for extra flavor).
2. Prepare the toppings
      •   Heat 1 tbsp olive oil in a pan.
      •   Lightly sauté the onion and garlic until softened.
      •   Add the zucchini slices and cook briefly (just to remove some water, not fully cooked). Set aside.
3. Assemble the pizza
      •   Preheat oven to 220°C (425°F).
      •   Spread tomato sauce evenly over the pizza bases.
      •   Add the sautéed onion, garlic, zucchini, and marinated chicken on top.
4. First bake (without cheese)
      •   Place pizzas in the oven and bake for about 10–12 minutes until the chicken is nearly cooked through.
5. Add cheese
      •   Remove pizzas, sprinkle generously with shredded mozzarella, and return to the oven.
      •   Bake another 8–10 minutes until the cheese is melted and golden, and the chicken is fully cooked.
6. Serve
      •   Slice, sprinkle with a little extra oregano or fresh basil if you like, and serve hot.
