★★ Recipe for 200g of salmon milt ★★
♦♦Preparing the Milt♦♦
① First, arrange 100g×2 of milt on a tray. Sprinkle 1 teaspoon of salt on each milt, gently massage, and let sit for about 15 minutes.
② Boil water in a pot or frying pan and boil the milt from ① for 1.5 to 2 minutes. Once the milt has turned whitish and is cooked through, drain the water and immediately place in cold water to cool and drain.
③ Use a bamboo skewer to remove the veins. Gently rinse the milt under water to remove any small veins.
If the inside is still red and not yet cooked through, continue boiling while checking the condition.
Once prepared, gently wipe off the water with kitchen paper and it’s ready.
🌹🌹Shirako Ponzu Recipe🌹🌹
Cut about 60g of prepared shirako into bite-sized pieces and arrange on a plate. Sprinkle with a generous amount of green onions and momiji orosh , then finish with a drizzle of ponzu sauce. And you’re done!
🌿🌿Grilled Shirako with Butter and Soy Sauce🌿🌿
1. Cut about 140g of shirako into bite-sized pieces, sprinkle with a generous amount of salt and black pepper, place in a plastic bag, add 1 tablespoon of potato starch, and shake the bag to coat the shirako evenly.
2. Add 1 tablespoon of olive oil and 1 tablespoon of butter to a frying pan heated over medium heat. Add the potato starch-coated shirako from step 1 and cook until golden brown on both sides.
Once golden brown, add another 1/2 tablespoon of butter and 1 tablespoon of soy sauce and cook lightly.
It’s so addictively delicious! 😋💖
The sake I enjoyed with this salmon milt dish was Kagetora Ryu, a sake from Niigata Prefecture, Japan.
It’s a refreshing, dry drink that pairs well with a variety of Japanese, Western, and Chinese dishes. It’s my favorite! ❤️ It’s also reasonably priced, so I highly recommend it! 😉👍✨💕
★★材料(鮭の白子200g分のレシピ)★★
♦♦白子の下処理方法♦♦
①まず最初にトレイに白子100gのものを並び入れて、1本につき小さじ1のお塩を振りかけ優しく揉み込み15分程おきます。
②鍋やフライパンでお湯を沸かして①の白子を1分半~2分ほど茹でます。全体に白っぽくなり火が通ったら湯切りしてすぐに冷水にさらして冷やし水切りをします。
③竹串を使い血管を取り除きます。細かな血管は水につけながら優しく洗いながら取り除きます。
まだ中が赤く火が通ってない場合は再び様子を見ながら茹でて下さい。
処理が済んだらキッチンペーパー等で優しく水気を拭き取り完成です。
🌹🌹白子ポン酢レシピ🌹🌹
下処理が済んだ白子60g程を食べやすい大きさにカットしてお皿に盛り付け青ネギを適量散らし、もみじおろしを適量のせて最後の仕上げにポン酢を適量かけて出来上がりです。
🌿🌿白子のバター醤油焼き🌿🌿
①白子140g程を食べやすい大きさにカットして塩とブラックペッパーを適量振りかけてビニール袋に入れ大さじ1の片栗粉も加え袋をシャカシャカ振りまんべんなく白子に片栗粉をまぶします。
②中火に熱したフライパンにオリーブオイルを大さじ1とバター大さじ1を入れ①の片栗粉まぶした白子を入れり両目焼き色が付くまで焼きます。
焼き色がついてきたら更にバター大さじ1/2と醤油大さじ1を加え軽く焼き完成です。
超やみつきになってしまう美味しさです😋💖
