This time, I made shiogama-yaki (salt-baked seabream). It is said that this dish originated with Toyotomi Hideyoshi when he wanted to gift freshly caught seabream to his mother, so he wrapped it in salt to keep the fish moist and flavorful. By wrapping the fish with salt, it steams the fish evenly and keeps it very juicy. This type of dish is often served at a ceremonial events in Japan. The cooking process is actually pretty simple, so if you get a chance, please give it a try!

【Ingredients】
1 lemon
2-3 sticks of rosemary (or any herbs you like. I also used sage, thyme, basil)
1 whole white fish (I used seabream with the scales still attached. If your fish is already de-scaled, use more kelp to cover the fish so the salt doesn’t directly touch it.)
1 sheet of kelp

1kg coarse salt (mine was $5 for 5kg/1$ for 1kg)
3 egg whites
1tbs flour

  2. Beautiful cats, obviously you love them very much. The recipe is really great, thank you for sharing.

  3. Your advice of letting the cats sniff your ingredients really helped! My cat used to jump on and snatch food only because he wanted a smell. Now, I let him sniff it, he loses interest, and I can cook in peace

  4. Jun I love watching your cooking vlogs. They're so calming and make me want to try some of the recipes as well.

  5. The frequency of Jun's kitchen uploads has increased →Is there something new that you want to do?
    Because it's been mostly neglected…

  6. I don’t think Rachel or Jun realize just how special they are. Truly such comforting, kind people.

  7. Jun could make anything, and even if it turned out bad or looked bad I'd still be relaxed+ his videos are so nice

  8. What kind of oven is that? Never seen them in the US 😯

  9. Are cats allowed to eat such a salty fish? I know that animals may not eat too much salt.

  10. This looks so good omg. I do wonder, what do you do with all the salt that has been baked?

  11. It's really calming and relaxing to see your cats sitting on the chair in front of you and watching the cooking process without touching anything.

  12. the end result had me sitting here drooling like homer simpson 🙂 that looked amazing

  13. I would love to see Jun do a collab with Masaru. Masaru fishes up some crazy looking sea creature, and Jun cooks it.

  14. Jun, my cats and I missed you so much! They love watching you cook almost as much as your cats… almost

  15. I keep watching this over and over. Much needed therapeutic wholesomeness. But why did you hire Mr. Magoo for your captions/transcript?

  16. I’ve always had dogs and didn’t realize cats like to sniff things until I watched you Jun. So now I always offer up a sniff to them. 🎉

  17. I recognized this dish from playing cooking mama on my nintendo ds😂 watching it now feels really nostalgic
